Because you often ask us for them, here are some recipes for the cakes we offer for breakfast. Some of you might say, "But I didn't get that one?!" Well, this will be a good excuse to come back 😉
Lemon-coconut squares:
1 lemon ● 1 pot of plain yogurt (the pot is used as a measuring unit) ● 2.5 pots of flour ● 1 packet of baking powder ● 1/2 pot of oil (or butter 😋) ● 2 pots of sugar ● 1.5 pots of shredded coconut ● 3 eggs
1- Preheat the oven to 180°C (gas mark 6). Wash, zest and juice one lemon. Set aside.
Sift the flour with the baking powder. In a bowl, whisk together the eggs and yogurt. Pour in the oil and sugar. Mix well. Add the zest, lemon juice, and coconut.
Gradually add the flour-yeast mixture in three additions. Stir the dough well.
2-Pour the mixture into a baking tin lined with baking paper and bake for 20 to 25 minutes.
3- Remove from the oven and let cool on a wire rack.
4- Cut the cake into squares and serve immediately.
Coconut Rocks:
100g grated coconut ● 90g cane sugar ● 2 egg whites
1. Preheat the oven to 200°C. Mix the coconut with the sugar.
2. Add the two egg whites and mix well.
3- Cook for 10 minutes in a bain-marie (stirring regularly)
4- Form small mounds and place them on a baking sheet in the oven for 6 to 7 minutes (Turn the rack halfway through cooking)
